Basic aims:  functional role of microorganisms in food
production and distribution: pathogens, spoilage
microorganisms, microorganisms for food technology;
knowledge of methods and systems for assessing
and managing the microbiological risk in food chains.
Knowledge of the role of the microbiota to maintain
intestinal and systemic health. Knowledge of the role of diet
on the modulation of the intestinal microbiota composition.
Understanding the role of human microbiota as a mediator
of the effect of specific food components on host’s health.
Acquired skills:  Ability to design, manage, develop control systems
for the microbiological safety and quality of food;

Molecular techniques culture-independent for the
investigation of microbial diversity (1h); Principles of
microbial ecology, alfa- and beta-diversity, richness and
evennes (1h);
The human microbiota: a body map (1h);
Description and functionality of the oral microbiota (1h);
Description of human skin microbiota (1h);
The gene-transfer mechanisms in microorganisms and the
problem of the antibiotic-resistance (1h);
The role of EFSA in relation to the antibiotic-resistance
problem (1h);
Three case-study on the microbial antibiotic-resistance and
the human microbiota: 1-virome and antibiotic-resistanc, 2-
acquisition of antibiotic-resistances during traveling, 3-the
control of antibiotic-resistant enterococci using bacterial
strain bacteriocin-producers (2h).
