Basic aims:  The course aims to provide students with the basis of the application of agro-food industrial processes and energy systems that rely on biotechnology. The examples concern the production of biofuels and molecules of interest in agriculture, food and nutraceutical
Acquired skills:  Being able to use the practical and theoretical background information about biotechnology in food bioprocesses and the production of biofuels
Course contents:  Techniques of biocatalysis and bioreactors, immobilization of enzymes and downstream processes (1 credits) Production of biofuels (1.5 credits): Metabolic engineering: the production of bioethanol with recombinant strains of yeasts and bacteria Production of biobutanol Hydrogen production from plant biomass Biodiesel production from algae Biocatalytic production of molecules of interest food (eg high fructose corn syrup HFCS, Aspartame, structured triglycerides) (2 credits) Protein production (1.5 credits)
Program:  1) Biocatalysis in the agrofood industry and for the
environment: industrial biocatalysts, introduction and
definitions
2) Hydrolases and their applications: glycosidases for the
treatment of plant biomasses, modification and
preparation of sugars in the food and drink industry,
proteases for the preparation of peptides, lipases for the
modification of lipids. Examples of industrial applications
(eg high fructose corn syrup HFCS, Aspartame, structured
triglycerides)
3) Oxidoreductases and their applications: use of
recombinant whole cells as industrial biocatalysts for
redox reactions
4) Case-studies: production of aminoacids, carnitine and
vanillin
5) Techniques of biocatalysis and bioreactors:
immobilization of enzymes and downstream processes
6) Production of biofuels : Metabolic engineering: the
production of bioethanol with recombinant strains of
yeasts and bacteria Production of biobutanol Hydrogen
production from plant biomass Biodiesel production from
algae
7) Production of recombinant proteins by fermentation:
hosts, techniques and applications
Prerequisites:  Basics of organic chemistry, microbiology, biochemistry
and molecular biology
Preparatory instructions:  none required

Other info:  1. The exam is organized in a written test
2. Any additional information on how the evaluation will
be presented during the course.
3. After the written test , students with an overall grade
lower than or equal to 27/30 may ask to undergo an oral
examination. The oral exam may not necessarily imply
improvement of the vote.
