Basic aims:  To acquire a basic knowledge of the chemical, structural and functional characteristics of the main non-informational biological molecules, as well as of the different types of nucleic acids and of the flow of the genetic information. Knowledge of the characteristics of living organisms and their evolutionary history and heredity, the cell and its structures. Knowledge of cell types and their functions, tissues and organs of the organization, their relationships and their physiology, in relation to food characteristics.
Acquired skills:  Students acquire a fundamental knowledge of biology:
- ability to recognize the main non-informational biological molecules and to understand their functions;
- a basic knowledge of the flow of the genetic information;
- knowledge of structure and function of cellular organelles;
- knowledge of cell division;
- knowledge of some of the main physiological processes underlying the life of plant and animal organisms;
- ability to understand the main morphological and physiological characteristics of living organisms and of the cells that compose them.
Course contents:  Summary of the main chemical functional groups. Water: structure and properties. Acids, bases, and pH. Carbohydrates: structure and functions of the main monosaccharides, oligosaccharides and polysaccharides. Lipids: definition and chemical nature. Biological membranes: structure, composition, and functions. The different types of membrane transport. Nucleic acids: structure and functions of DNA and RNA. The flow of the genetic information.
Program:  Introduction: units of measurement, energy and heat, atom’s structure, chemical bonds, molecular weight, chemical reactions.
Water: structure and properties, self-ionization, acids and bases, pH, salts, buffers.
Compounds of carbon: saturated and unsaturated hydrocarbons, main functional groups, oxygenated organic compounds, compounds containing nitrogen or sulphur.
Carbohydrates: structure and functions of the main monosaccharides, disaccharides and polysaccharides.
Lipids: fatty acids, triglycerides, phospholipids, terpenes and steroids.
Biological membranes: structure, composition, functions and membrane transport.
Nucleic acids: structure and functions of DNA and RNA.
The flow of the genetic information.
