Basic aims:  To give information about the current framework of Italian viticulture, with particular reference to the wine processing. Provide the tools to build and/or judge the plant of a vineyard and its agronomic management, through the study of the major aspects of the vine ecophysiology.
Acquired skills:  Basic knowledge about the chain of production of grapes, preparation for designing, planning and realization of the vineyard and for its modern and correct agronomic management.
Course contents:  Both, Italian and European grape and wine backgrounds.
Origin of the gen. Vitis. Morphology and physiology of
grapevine; biological features and regulation of both,
vegetative and reproductive cycles of the vine.
Interactions between vine and environment. Goals and
methods of genetic improvement. Propagation and
nursery chain. Vineyard planting and management
strategies. Ripening physiology, harvest and interface
grape-wine. The viticulture for the production of table
grapes.
Program:  1° CFU Introduction of course: origin and history of
gen. Vitis; outlines of grape and wine culture;
systematic of gen. Vitis; distribution of gen. Vitis; from
the wild grape to the cultivated varieties; origin of
cultivated varieties. The vine and winemaking area:
the Italian grape and wine background; overview of
European and Worldwide vine and winemaking area.
2° CFU: Morphology: root system’s characteristics and
functions; characteristics and functions of aerial
organs. Physiology of vine: annual cycle of vine; the
vegetative under-cycle; the reproductive under-cycle;
biology and regulation of both vegetative and
reproductive under-cycles.
3° CFU Ecophysiology: relation between soil-climatic
environment and vine; the role of climate and of
chemical and physical soil characteristics on fruit-
setting; relation between grape varieties and
environments. The Zoning and the Precision Viticolture
4° CFU Genetic improvement: aims and methods of
genetic improvement; genetic improvement by asexual
way; genetic improvement by sexual way;
fundamentals of Ampelography. Viticultural nursery:
propagation and nursery chain; certification, viticultural
nursery guidelines.
5° CFU Vineyard planting: criteria of cultivar’s, clone’s
and rootstock’s choices; superficial layout and
preparation of soils; basic fertilization; planting
execution; structure and materials for the support of
the vineyard. Density of planting and its effects on the
production. The training system: characteristics and
description of the main types of training system;
possibility and limits of mechanization for the different
training systems.
6° CFU Agronomic management of the vineyard:
pruning physiological basis; raise pruning; production
pruning. Canopy management and vegetative-
productive balance of vine. Water and mineral nutrition
of vine; main nutritional diseases. Techniques of soil
management: green cover, tillage and weeding.
Harvest: ripening control; interface grape-wine. Outline
on table grape viticolture
Prerequisites:  Adequate knowledge of botany, agronomy and crop tree
