Animal Morphology and Physiology (Basic Course)

Basic aims:  The aim of the course is to furnish knowledge of elements of animal morphology and physiology, which constitute the indispensable biological cultural basis for the food technologist.
Acquired skills:  Specific knowledge of structure and function of domestic animals, with emphasis on physiological systems of importance to animal production and animal food technology.
Ability of comparing the anatomy and the physiology of different mammals.
Skills in biological and technical language necessary to describe physiological processes.
Course contents:  ANIMAL TISSUE: Epithelial tissue; Connective tissue: adipose tc and energy reservoir; bone and Ca metabolism; Muscolar tissue: white and red skeletal fibers. Nervous tissue. LOCOMOTOR APPARATUS. CIRCULATORY APPARATUS. RESPIRATORY APPARATUS. DIGESTIVE APPARATUS. EXCRETORY APPARATUS. MALE and FEMALE REPRODUCTIVE APPARATUS. MORPHOLOGY OF THE MAMMARY GLAND AND PHYSIOLOGY OF THE LACTATION. APPARATUSES IN BIRD AND FISH. PRACTICALS: use of the optical microscope for histology and of the spectrophotometer for the determination of some blood compounds. Osteology and miology and meat cuts. CLASSIFICATION OF ANIMALS: Porifera, Cnidara, Annelida, Arthropoda, Mollusca, Chordata-Vertebrata (Fish, Birds, Mammals). Morphology of seafood.

PRACTICALS: use of the optical microscope for histology and of the spectrophotometer for the determination of some blood compounds. Osteology and miology and meat cuts.
